- 1 cup of Geechie Boy Stone Ground Grits
- 4 cups of water
- Salt & butter to taste
Directions

Bring 4 cups of water (add salt and butter at this time) to a rapid boil in a heavy saucepan.

Add grits and stir until water boils again.

Lower heat to a simmer, cover and continue cooking for 25 minutes stirring often and adding water or milk if necessary.

Add salt and butter if you have not already done so.

These grits are wonderful! I found that cooking them, on an extremely low flame, for 1.5-2 hours really brought out the complex flavors.

Yes, same ratio. You can also brighten the pink by adding a couple of tablespoons of lemon or lime juice.

We are absolutely addicted to your grits!
I soak them in cold water while I bring half the measurement of water to boil with salt, then drain excess water off the grits and add to the boiling water. They don’t clump or lump this way, it seems to me. After a 10-15 min. simmer and when they get thick, I add about 1/2 cup cream and keep on very low simmer another 10-15 minutes, adding more water if needed…um um good!
